Martha: This is the Pizza recipe I promised using
some of the Cream Spinach/Alfredo sauce from the Chicken Spinach Alfredo
recipe. This is so good and so simple to
make. I heated a large frying pan on med.
heat. Spread butter on one side of the
tortilla shell, placed it butter side down in the hot pan. Topped that with some of the Spinach Alfredo
sauce as you would a pizza. Topped that
with a sprinkle of chicken and then shredded cheese. Put a lid on the pan and let it cook until
the cheese has melted. This is something
that can easily be done on the spur of the moment too. You can a can of well drained chicken or deli
sliced chicken in place of the fresh cooked.
Just keep a package of cream spinach in the freezer and a jar of Alfredo
in the pantry. Perfect for unexpected
drop-in company who you want to serve a snack.

have made homemade pizza many times but not with a tortilla shell....but then,
why not? I have made wraps with those shells and some of them have tasted like
pizza and they pleased everyone. The idea of just making this pizza in a frying
pan is great! No oven heat to contend with and this is cooked in a short time.
Tip: If you don't like boiling your chicken to help remove the 'stuff' (blood) that cooks out there is another solution. Place your chicken in a large bowl, cover it with cold water that's been heavily salted. Cover and refrigerate for at least 3 hours. This draws out the blood and helps to keep the breast meat white. This can also be done when you're thawing a frozen chicken.
